Emeril's: Where’s the BAM?

Emeril’s is a nice looking place (large and open with a modern decor). The premium drinks are very expensive: 3 Hennesey XO’s at $80.00.
Three of us had the gumbo, none of us really liked the taste. . .more beef gravy than creole flavor and I wondered. . .“where’s the seafood”? (There were maybe three shrimp in it).
Two of us had the Filet and they said it was just ok and not great tasting. Two of us had salad. I had the crab salad and it tasted like lump crab with mayo and iceberg lettuce (nothing special, no distinct flavor/spice).
The service was good, but the food was nothing to write home about.
